Not a 'pro' at cooking? In a rush? No clean bowls? No problem , make this great berry muffin in mug for a quick snack or breakfast. It will take just a few minutes to prepare and only one to cook!

If you need to go out just scoop it out and place into an air-tight container and carry in your bag as an easy on-the-go breakfast or snack. 


1 egg

1/4 cup oats (Use gluten or wheat free oats if needed)

Handful of berries (can use frozen)

1 tsp of stevia or sweetener of choice

Optional - 1/4 teaspoon of cinnamon

If you want your muffin a little moist add a tablespoon of skimmed, soya or almond milk 


Simply mix it all in a coffee mug

Then microwave for 1-2 min (watch carefully so it doesn’t overflow)

Take it out and flip upside down onto a plate and enjoy!

(Add an extra 30 sec if it needs to firm up.)
